I am sooo tired. Not sure why, but puppies that get up at 5 am could have a lot to do with it. So, without... something... here are some recipes:
4 slices whole wheat bread (1 oz slices) crumbled
1tsp baking powder
1tsp seafood seasoning, such as Old Bay
1tblspn plus 1 tsp. mayo (recipe says reduced calorie mayo but I don’t think Side Pocket allows that.)
2 egg whites
2 cups finely shredded zucchini, unpeeled (pack tightly in cup to measure)
In a large bowl, combine all ingredients except zucchini. Mix well.
Place zucchini in a large strainer. Press out as much liquid as possible. Add to bread mixture. Mix with fork for a few minutes until mixture is well combined and holds together.
Preheat griddle or skillet. Oil lightly.
Divide zucchini mixture evenly into 8 portions and shape each into a patty. Place on griddle cook, turning several times until patties are lightly browned on each side. Serve hot. (leftovers are good hot or cold.)
Cheeseburger Biscuits from Tic Toc
1lb ground turkey or beef
Some amount of ketchup or bbq sauce. I wrote down 2 cups but that can’t be right. The first time I made it I used 8 to go packets. I don’t keep ketchup in the house.
2 tblsns brown sugar
1tblspn mustard or honey mustard dressing (I don’t keep mustard in the house either.)
½ cup cheddar cheese grated
1 tube 12 oz refrigerated buttermilk biscuits
Cook turkey — breaking into crumbles — add ketchup, mustard and brown sugar
Press biscuits on bottom and upsides of greased muffin cup. Spoon in turkey/beef mixture, top with cheese.
Bake @400 for 14 to16 minutes.
Ice Cream from Tic Tok
In a gallon baggie put 1 cup milk, 1 cup heavy whipping cream, 1 tblspn sugar, 1 tsp vanilla extract. Seal baggie.
In another gallon baggie fill about half of it with ice cubes (not crushed) and salt (from a shaker)
Put the baggie of milk stuff inside the baggie of ice and salt and seal well. Dance and shake with the baggie for 10 to 15 minutes till you have soft serve ice cream!
